<p>Even some of the smallest, seemingly dingiest spaces are full of possibility. My favorite living space was a tiny apartment in a fifth-floor walk up that had a kitchen the size of a fingernail (yes, it was very small). Why did I love it so? I made it mine. I was on a tight budget, but I&#8217;d find cute things (like that folding chair on the side of the road), paint it up, and repurpose it as a plant stand. Everywhere I looked, the place had my touch, my favorite colors, and was functional enough because I kept clutter to a minimum.</p>
<p>If there are items that you just can&#8217;t part with, but they&#8217;ve outgrown their function for you, is there a way you can repurpose it or give it new life? Can those ripped concert t-shirts be made into a soft, nostalgic throw? Can that old wine rack be painted and redirected to hold your magazines or throw blankets? Can that cracked bowl be turned in to a planter with a few quick fixes? That rusty old end table? Give it new life by painting it a vibrant share of marigold. <h3 style="text-align: center;"><strong>Get Clear: &#8220;I Don&#8217;t Even Know What I Want&#8221;</strong></h3>
<div>If you&#8217;ve ever found yourself drawn to the relationship section of a bookstore, coffee in-hand, immersed in the Patti Stanger book about how to make yourself desirable to a potential mate or that guide on becoming a more efficient dater (no personal experience on this one or anything&#8230;), you probably already know that the first key to finding <em>your</em> right match is getting clear on what you absolutely DON&#8217;T want and completely DO need.I&#8217;m not talking the superficial, &#8220;I need him to be 6&#8217;3&#8243; stuff; I&#8217;m talking the substantive qualities that by experience you have found that you NEED in a partner to complement and inspire you, and the cruddy, undesirable qualities you don&#8217;t want making your life all toxic. I can&#8217;t define these for you, but there are some exercises that can help you move toward clarity:</p>
<ol>
<li><strong><span style="color: #800080;"><em>Don&#8217;t seek every quality in one individual</em> </span>- Because that&#8217;s nearly impossible (unless you clone yourself, and if you can do that, please let me know). Determine what qualities you need in a partner and which ones you can get your fill of elsewhere.</strong></li>
<li>
<h4><span style="color: #800080;"><em>Lightly analyze your last five relationships</em></span> - I say &#8216;lightly&#8217; because we don&#8217;t want you laid up with the vegan ice cream and sad songs for a week. Collect yourself and think, what were the top five <em>finest</em> qualities of each partner that best complemented you and what were the five undesirable qualities? Do you see a pattern among the best and worst? (<em>Hint: You&#8217;ll likely see a pattern</em>)</h4>

<li>
<h4><span style="color: #800080;"><em>Be realistic</em></span> - This does not mean &#8216;give up all of your standards,&#8217; it simply means be forgiving with your requirements of others. No one is a philanthropic, self-made, MENSA-member, ethical vegan supermodel mogul with buns of steel. So, don&#8217;t require that detailed of a rubric and you&#8217;ll enjoy a bigger pool.</h4>
</li>
<li>
<h4><span style="color: #800080;"><em>Imagine how your &#8216;ideal relationship&#8217; would feel </em></span>- Not how the person looks or what s/he does, but how you would <em>feel.</em> What do you do together? Do you feel valued? How are you treated? How do you behave toward the other person? You learn a lot of lessons from this exercise.</h4>

<li>
<h4><em><span style="color: #800080;">Become the kind of person you wish to attract</span> </em>- This is kind of a no-brainer. Looking for someone in to do-gooding? Start volunteering. Hoping for a partner who shares a love of animals? Get thee to an animal shelter.</h4>

For others, veganism is a principled code, a way of life, a religion of sorts that affects food, fashion, entertainment, and other decisions. I say this affectionately, because it&#8217;s the latter for me. Once you&#8217;ve determined where you are along this spectrum, determine your boundaries. Again, no one can determine these parameters for you, but getting crystal clear on what you can and cannot tolerate is the first step in being honest about what kind of relationship you want and knowing how to find it. Don&#8217;t feel shy about this exercise. Many people require that their ideal partner share their faith, political leanings, and other commonalities, and veganism is no less important or valid. Here are some questions to get you started:</span></div>

Life&#8217;s fun that way, and love kinda works like that, too.</span></span>Many vegans have found love and fulfillment with partners who didn&#8217;t start off as vegans or still are not. I love the recent <a href="http://www.compassionatecook.com/writings/podcast-media/vegan-dating" target="_self" data-cke-saved-href="http://www.compassionatecook.com/writings/podcast-media/vegan-dating">podcast that Colleen Patrick-Goudreau did on this topic</a> because it emphasizes having standards, while staying open. The takeaway: Never underestimate the power of gently inspiring your partner for the better. Moreover, famous vegans, <a href="http://www.vanityfair.com/business/features/2011/02/out-to-lunch-freston-201102" target="_self" data-cke-saved-href="http://www.vanityfair.com/business/features/2011/02/out-to-lunch-freston-201102">like Kathy Freston</a>, have partners who are not vegan or are &#8220;<em>veganish</em><em>&#8220;</em> and still enjoy happy, fulfilling relationships. Whoa. Yes, it&#8217;s that simple. This usually incites curiosity from a date (and everyone else in your life): &#8220;Really? In the world of food fights, tofu is the lily-white, slightly trembling kid with thick glasses on the playground who grows up to do great things, like start <a href="http://www.beyondmeat.com" target="_self" data-cke-saved-href="http://www.beyondmeat.com">a billionaire-backed company that will change the way people think about food</a>. It&#8217;s such a staple of many vegetarian meals, that some folks think that vegans and vegetarians subsist on tofu alone, which is not true at all, but wouldn&#8217;t be the worst thing in the world. Why? Because tofu is the tasty chameleon of the veg world. It&#8217;s your little helper whether you&#8217;re whipping up a cream pie or a BBQ. Let&#8217;s talk tofu, shall we?</span></p>

<strong>How Do I Pronounce That?: </strong>Toe-Foo<br />
<span style="font-family: 'trebuchet ms', 'lucida grande', 'lucida sans unicode', 'lucida sans', tahoma, sans-serif;"><strong>Types: </strong>There are two types of tofu: Silken or soft tofu, and regular or firm tofu. Both types boast a variety of textures (firm, extra firm, etc) and can come in raw, sprouted, and/or organic formulations. Opt for organic and sprouted versions if you wish to avoid genetically modified (GMO) nasties and want to up the nutrient content.<br />
<strong>Why It Rocks:</strong> Nutritionally, tofu is high in protein, low in fat, and naturally cholesterol-free. It also contains healthful <a href="http://www.phytochemicals.info" target="_self" data-cke-saved-href="http://www.phytochemicals.info">phytochemicals</a>,</span> such as isoflavones and soy saponins. For cooking, tofu absorbs whatever flavors and marinades it is exposed to. Silken tofu lends a cream-like quality to foods and adds a soft, spongey deliciousness to soups (think those little white pearls in miso soup), while firm tofu can be used to sub for egg-like consistencies, and create rockin&#8217; meat analogues and other dishes requiring a soft, but toothsome texture. Moreover, tofu is inexpensive and can be found practically anywhere. From health food stores, to Asian markets, to your corner store &#8211; tofu is quite possibly the easiest to procure meat substitute.<br />
<strong>Why It Gets a Bad Rap:</strong><span style="font-family: 'trebuchet ms', 'lucida grande', 'lucida sans unicode', 'lucida sans', tahoma, sans-serif;"> Tofu is a processed soy product, and the verdict is still out on unfermented, photo-estrogen rich soy products. It&#8217;s crunchy texture is unique and while it&#8217;s not as prevalent as tofu, it&#8217;s very versatile and, due to its fermentation, is considered to be less health-controversial. </span></p>
<div><strong>What Is It?: </strong><a href="http://en.wikipedia.org/wiki/Tempeh" target="_self" data-cke-saved-href="http://en.wikipedia.org/wiki/Tempeh">Tempeh</a><strong> </strong>is a traditional soy product originally from Indonesia. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form, similar to a very firm vegetarian burger patty. Many commercially prepared brands add other grains, such as barley.<br />
<strong>How Do I Pronounce That?: </strong>Tem-Pay<br />
<strong>Types: </strong>Tempeh is available in many commercially-prepared varieties, including organic, sprouted, smoked, and with different grain and spice preparations, like flax and barley. Experiment to lend different flavors and textures to your recipes.</p>
<div><span style="font-family: 'trebuchet ms', 'lucida grande', 'lucida sans unicode', 'lucida sans', tahoma, sans-serif;"><strong>Why It Rocks:</strong> </span><span>Tempeh boasts </span>18.2 grams of protein (that&#8217;s even more protein per gram than tofu!) per serving, 10% of the RDA of both calcium and iron, and is a naturally cholesterol-free food.  Moreover, <span>t</span>he soy carbohydrates and B12 (in some versions) in tempeh are more readily <span style="font-size: small;">available</span> and easily digestible as a result of the fermentation process. Tempeh has a naturally nutty flavor that is unlike tofu, but assimilates spices and marinades well like tofu.</div>

<strong>Types: </strong>Seitan comes in so many varieties, your head will spin. You can buy already prepared seitan in a variety of flavors and firmness. There are also commercially-available seitan mixes that require only some liquid, stirring, and cooking to create a masterful loaf, and many are geared toward replicating a certain kind of meat. And, among the meat subs, seitan is the easiest to customize and make at home. Seitan blends often feature tofu or tempeh to create different textures and levels of chewiness.</p>

<p><span style="font-family: 'trebuchet ms', 'lucida grande', 'lucida sans unicode', 'lucida sans', tahoma, sans-serif;"><strong>Names &amp; History:</strong> Beans, peas, and lentils (also known as &#8220;legumes&#8221; or &#8220;pulses&#8221;) are seriously ancient superfoods. Evidence shows that peeps were cultivating these bad boys as far back as 7,000 years ago.  What?  Yes.  While only a fraction are mass-produced for consumption, there are around 40,000 varieties of beans alone.  And with sassy-names <a href="http://www.wholefoodsmarket.com/recipes/food-guides/beans" target="_self" data-cke-saved-href="http://www.wholefoodsmarket.com/recipes/food-guides/beans">like &#8220;Eyes of Goat&#8221; and &#8220;Tongues of Fire,&#8221;</a> get ready to never be bored again.<br />
<strong>Why They Rock:</strong> Nutritionally, beans boast a unique combination of protein, soluble dietary fiber, and complex carbohydrates.  A cup of cooked beans can provide as much as 9 &#8211; 13 grams of fiber.  Economically, they&#8217;re cheap as can be.  Time-wise, with a few prep steps, you can have a jammin&#8217; meal in no time.  Environmentally, they&#8217;re extremely easy to cultivate and sprout, and demand very little water or space.  Good for you, your wallet, your watch, and the world.  Check.<br />
<strong>Why They Get a Bad Rap:</strong> They can cause flatulence, thanks to <a href="http://en.wikipedia.org/wiki/Oligosaccharides" target="_self" data-cke-saved-href="http://en.wikipedia.org/wiki/Oligosaccharides">oligosaccharides</a>, a type of sugar molecule found in cabbage which can be difficult for folks to digest.</span></p>

<p><span style="font-family: 'trebuchet ms', 'lucida grande', 'lucida sans unicode', 'lucida sans', tahoma, sans-serif;">Like you, I want to serve food that makes people say, &#8220;Yum!&#8221; and not &#8220;TOOT.&#8221;  Fortunately, there are some techniques that make cooking beans simpler and less gassy.  For peas and legumes, you will still need to sort and clean, but you don&#8217;t need to necessarily soak, as they contain little to no gas-inducing saccharides.  If you&#8217;re more of a canned beans person, you need only to drain and rinse your beans before you start working them in to your recipes.  And, if you&#8217;re working with dried beans, which are the most economical route, here are some tried-and-true steps for making the most of the little gems.  Be sure to select organic options whenever possible.</span></p>

<li style="text-align: left;"><strong>Sort: </strong>Yes, it&#8217;s a bit tedious. But, sifting the pebbles and silt that can naturally settle in a bag of beans will save you on future dental bills, and can actually be a meditative exercise in mindfulness.  At the ashram, sorting beans was a very sought-after gig, because it gave people time to appreciate the composition of each and every little bean.  And, if we can appreciate even the smallest bean or pea, what bigger things in our life will we come to appreciate?</li>

<p style="text-align: left;"><span style="font-family: 'trebuchet ms', 'lucida grande', 'lucida sans unicode', 'lucida sans', tahoma, sans-serif;"><strong>Names &amp; History:</strong> An ancient buddy of legumes and pulses are grains.  For agricultural purposes, grains are often broken into categories like: Cereal grains, pseudo cereal grains, and oilseeds.  You&#8217;re probably familiar with wheat, rice, oats, and maize (corn), but what about some of their more exotic cousins like teff, millet, and amaranth?  The first cereal grains were thought to be cultivated some 12,000 years ago in the Fertile Crescent.  Whoa.<br />
<strong>Why They Rock:</strong> Grains pack a lot of nutrients in a little, calorie-dense, easy-to-replant package.  For struggling civilizations, a handful of grain meant a future crop was possible.  For us, grains boast fiber, and some, like quinoa and oilseeds, like hemp, provide significant amounts of protein.<br />
<strong>Why They Get a Bad Rap:</strong> In our process-obsessed agricultural system, grains have been bleached, hulled, refined, and productized beyond recognition, whisking away much of their nutritional value.  Moreover, gluten-intolerance and Celiac disease have made glutinous grains, like wheat, unpopular.  When eaten alone, grains can be deficient in the <a href="http://en.wikipedia.org/wiki/Essential_amino_acid" target="_self" data-cke-saved-href="http://en.wikipedia.org/wiki/Essential_amino_acid">essential amino acid lysine</a>, which is why many cultures combine grains with beans and legumes to form a more complete protein profile.</span></p>

<li><strong>Shop during off-hours.</strong>  This isn&#8217;t always possible, but have you ever been to a grocery store at, say, 10am on a Wednesday and marveled at how peaceful an experience it is?  When not rushed or stressed, people tend to make healthier and more fiscally-sound purchases.</li>
<li><span style="font-family: 'trebuchet ms', 'lucida grande', 'lucida sans unicode', 'lucida sans', tahoma, sans-serif;"><strong>Visit Farmer&#8217;s Markets &amp; Co-Ops.</strong>  You&#8217;re likely to get better deals on food that is in season or bulk, you&#8217;ll support local farmers and business, and the food will be a tasty adventure party in your mouth because it&#8217;s fresh.</span></li>
<li><strong>Shop the circumference of the store.</strong>  This is where the good stuff is, like the fruits and veggies.  The grains and beans are a few aisles in, but the closer you get to the inner sanctum of the store, the more you will be enticed by pricey convenience foods and sugary, salty snacks.  Stay to the perimeter and you&#8217;ll find the more wholesome, and often cheaper options.</li>
<li><strong>Buy store brands if possible. </strong> Sure, I&#8217;d love to be a millionare vegan who buys all brand name, organic, locally-sourced, premiere ingredients.  But until this newsletter goes platinum, I will continue to buy decent store brands for stuff that isn&#8217;t worth the markup, like dried beans, flour, and grains.</li>
<li>I<strong>f you&#8217;re a city-dweller, buy only what you can carry home.</strong>  This was once a practice of necessity (no car, little money), until I realized how excellent it is for the wallet.  Walking to fetch my groceries meant that I wasn&#8217;t blowing money expensive, nice-to-have, heavy items.  I was only buying what I could carry home.  This meant that I rarely bought stuff I didn&#8217;t need or wouldn&#8217;t eat.  And it gives you fantastic arm strength.  The end.</li>
<li><strong>Pay Cash.</strong>  Sure, swipin&#8217; a debit card is easier, but paying with good old greenbacks helps you to stay on budget.  When that cash leaves your hand, believe, you will be treasuring your groceries all the more.</li>
