    How are those vegan baking experiments going? Have you noticed that most vegan baking recipes call for cane sugar and other unrefined sugars? There’s actually two reasons for this. One, these are generally healthier. Two, many vegans don’t use processed sugar because the refining process involves a charcoal that comes from animal bones. So while the actual sugar doesn’t contain animal ingredients, the process of making the sugar is not animal-friendly.

    Instead of using sugars, some vegan bakers use coconut nectar, dates, applesauce or maple syrup as sweeteners for a little bit of added nutrition and to lower the glycemic index or rate at which the sugar (or glucose) is released into the body. Some even get creative integrating veggies and, of course, fruits into baked goods for more nutrition.

    Agave nectar also makes a substitute for both sugar and honey.
