    When you toss the word vegan around, how many people ask, “Oh, you must eat a lot of pasta, right?” Sure, we eat pasta. But we vegans also eat a slew of other yummy stuff.

    Today, stop thinking about the things you can’t eat – ahem, choose not to eat! – and start thinking about all of these instead:

    Breakfast:

    • Cereal with soy, nut, rice or coconut milk
    • Most hot cereals – oatmeal, steel cut oats, grits, you name it
    • Bagel with peanut butter and banana slices
    • Apples, bananas, pears and every other fruit under the sun

    Lunch:

    • Peanut/almond butter and jelly
    • Amy’s lentil soup over brown rice
    • Falafel and hummus wraps
    • Bean and rice burritos with vegan sour cream and vegan cheese or just guac!

    Dinner:

    • Pad Thai, just hold the egg
    • Veggie Burgers
    • Veggie chili
    • Stir-fried veggies with tempeh over rice

    Snacks:

    • Tortilla chips with salsa or guacamole
    • All kinds of crackers
    • Fresh veggies with hummus
    • Apples with peanut butter
    • Soy, coconut milk or almond milk yogurt
    • Trail Mix
