    It’s no secret that being vegan takes a wee bit more time than that nasty old standard American diet. But so does any healthy diet. And given all the bonuses that come along with going vegan, it won’t kill you to give up an hour of TV every couple of days to devote time to being vegan. Actually, it might even save you.

    Today, let’s have a prep day, one of the many ways you can maintain a healthy vegan lifestyle without it taking over everything else you love. Not a huge cook? You never know – the more you experiment in the kitchen, you might find you really enjoy cooking. The key is to stop worrying about perfection. Just enjoy the process and enjoy that fact that you’re creating something new.

    Sunday is a golden prep day. As the week is winding down, turn up the tunes and jam out as you make at least two meals. You can have fun making a veggie chili or stew. Or maybe you keep it simple and whip up a quick pesto sauce. If a recipe makes more servings than you need, stick a few in the freezer to enjoy at a later date.

    Even if you don’t make full meals, chop up the makings of the meals. That way, when you’re exhausted after work on Monday, you can just grab the chopped veggies and make a stir-fry or salad. Ten minutes later, voila! Dinner!
